Tomato Salad with Honey-Lime Vinaigrette

 Tomato Salad with Honey-Lime Vinaigrette on plate recipe made with ReaLime

This honey-lime vinaigrette is the perfect complement to juicy, colourful tomatoes and fresh spinach.

Ingredients:

6 oz (175 g)
baby spinach
3
medium red and/or yellow tomatoes
¼ cup (50 mL)
ReaLime® Lime Juice
¼ cup (50 mL)
olive oil
2 tbsp (30 mL)
honey

garlic cloves, finely chopped
¼ tsp (1 mL)
salt
⅛ tsp (0.5 mL)
pepper
1
shallot, thinly sliced

Directions:

Divide spinach among salad plates. Cut each tomato into wedges; divide among plates. For dressing, combine ReaLime® Lime Juice, oil, honey, garlic, salt and pepper in a screw-top jar. Cover, shake well. Drizzle over salad. Sprinkle with sliced shallot.

Makes 4 servings.
